Teresa's Vegan Banana Bread

Recipe: Vegan Banana Bread

So should I tell the truth that I’ve never really baked before? Ahah…

So actually the reason I started to bake the banana bread as a sugar-free cake is because we ran out of sugar, so I had to be inventive and I was like: 

Okay, I need to bake a cake, I ran out of sugar, what do I have? 

What I had is lots of dates, so I mixed them with a bit of olive oil and from this I could make a sugary paste. It turned out to be a really sweet paste, which tasted good, so I added it to the normal cake mixture and that’s how it ended up a healthy, vegan, no added sugar banana bread.


Ingredients:

  • 4 bananas

  • 1 cup dates

  • 185 g flour

  • 75 ml coconut oil

  • 1 and 1/4 teaspoons baking soda

  • coconut powder

  • walnuts

So the most important is that we use nice, old, spotty bananas, those really sweet ones. The main ingredients - this one is a vegan cake, so we don’t use butter, but we substitute it with coconut oil for better consistency. Flour, dates instead of sugar and that’s it. 

You can also add dates and walnuts, or a little bit of coconut powder, but it depends on how you want to spice it up. Really easy to make. 

Preheat the over first. Smash the bananas, slowly add coconut oil, then add flour and a little bit of baking soda. Then add all the rest of the ingredients, anything you want to add extra like dates, walnuts, coconut powder or more bananas. Put the mixture in a tin, with a little bit of coconut oil around it and leave it in the oven for around 40 minutes.
